his course concerns itself with the living organisms used to produce beer. Topics will include how toselect, propogate, and care for yeast. The structure of a yeast cell, yeast metabolism, and mutations and variations of yeast specieswill also be emphasized. The course will touch onselect strains of bacteria relevant to the brewing industry.
