This course concerns itself with the living organisms used to produce beer. Topics will include how to select, propogate and care for yeast. The structure of a yeast cell, yeast metabolism, and mutations and variations of yeast species will also be emphasized. The course will touch on select strains of bacteria relevant to the brewing industry.
